  • Academic Perspectives of US Hospitality Programs: A Ranking Report

    • Authors: Dolasinski; Mary Jo et al.
Abstract: Administrators of hospitality programs in the US rank ordered 38 US hospitality educational institutions. The list of 38 hospitality programs was developed from ranking studies that had been recently published in academic journals by researchers and “for profit” organizations. A key distinction of this study was considering the perspectives of deans, directors, and academic program chairs hospitality programs in the US. A high degree of commonality was identified. The two key attributes that were identified as most important in ranking were experience/internships and curriculum, suggesting that the curricular and co-curricular aspects were of higher assessment value than other factors such as location, quality of facilities, program size, or numbers of faculty.

  • Microlearning: A Pilot Study

    • Authors: Reynolds; Joel et al.
Abstract: The purpose of this study was to pilot test the Dolasinski and Reynolds (2019) Microlearning Model in a hotel environment. Training materials were developed, designed, delivered, and assessed following the model using hotel specific content. Assessments was conducted prior to the training and for 60 days post training, showing that employees improved overall performance and guest scores improved for 60 days post training. Positive results suggest that the microlearning model could be used in hotels with success. There were some limitations of the study including size of sample. Future studies should be conducted with larger sample size and in other areas of the hospitality and tourism industry.

  • EXAMINING THE EFFECT OF DIRECT MAIL ON CASINO CUSTOMER VISITATION AND
           VALUE

    • Authors: Stroburg; Sharon et al.
Abstract: Customer relationship management in the form of direct mail is widely used by regional and local U.S. casinos for the purposes of building customer loyalty. Casinos can spend hundreds of thousands to millions of dollars each year sending direct mail, both with or without offers, often experiencing low response rates. As a result, managers need a better understanding of the impact of direct mail on customer loyalty. This paper investigates the impact on customer loyalty, defined for purposes of this study as frequency of visitation and customer monetary value, when a customer receives a mailing piece from a casino and upon redemption of an offer from the direct mail piece. Data analysis of secondary data from a regional U.S. casino was conducted to determine if relationships existed between direct mail CRM programs and casino loyalty. This resulted in identifying a significant positive relationship between both the receiving of direct mail and the redemption of a direct mail offer with increased visitation. Also revealed was an increase in customer value, as supported by a significant positive relationship between the redemption of a direct mail offer and an increased customer spending; however, no significant relationship existed between receiving direct mail and increased customer spending.

  • Customer Loyalty Directives And Employee Turnover Intention: A Qualitative
           Hospitality Industry Study

    • Authors: Burns; Lois Warren D.M. et al.
Abstract: The problem of high employee turnover in the hospitality industry is a critical leadership challenge. The focus of this qualitative phenomenological study was the determination of the perceptions, reactions, and experiences leading to retention intentions of frontline hotel employees whose job responsibilities included compliance with customer loyalty directives. Analysis yielded the emergence of six relevant themes: training, directives, customer orientation, compliance failure consequences, customer complaint experiences, and customer loyalty experiences. The findings indicate that compliance with customer loyalty directives and hiring employees with high customer orientation did not result in increased turnover intention.

  • Exploratory Analysis of ‘Other Revenue’ Impact on Full and
           Limited Service Hotel NOI

    • Authors: Maier; Thomas A. et al.
Abstract: Hotel ‘Other Revenue’ category is often overlooked as a means to improve NOI through heightened profit margin contribution. This study investigated the impact of ‘Other Revenue’ on NOI profit margin in 3,271 full and limited service U.S. hotels. A decision tree analysis was conducted to gain insight of various departmental expense ratios (independent variables) to NOI (dependent variable). Results indicated room and undistributed expense ratios had a greater impact on NOI than ‘Other Revenue’ in limited-service hotels, while food and beverage, undistributed, and room expense ratios had a greater impact on NOI profit margin than ‘Other Revenue’ in full-service hotels.

  • A comparative exploration of foodservice workers’ illicit drug use

    • Authors: Kitterlin-Lynch; Miranda Ph.D. et al.
Abstract: The U.S. foodservice industry has been identified as having the highest incidence of employee illicit drug use among all sectors of U.S. industries. This qualitative study attempts to identify the factors contributing to this top position in comparison to other industries (i.e., retail or transportation) and whether these factors are different than in other industries. Behavior theory and reinforcement sensitivity theory are the primary theories that created the foundation for this research. In-depth employee interviews were conducted to examine both possible motivators for and possible inhibitors to illicit drug use. The findings identified environmental workplace norms that both encourage and discourage employee illicit drug use, and also revealed reward stimuli that seem to boost employee illicit substance use and punishment stimuli that dampen it. Future empirical investigations using the study’s findings are recommended to identify solutions to decrease the foodservice illicit drug usage.

  • Optimized site selection for a health themed recreational city

    • Authors: Nadim; Zahra et al.
Abstract: Industrial cities have many issues including people working long hours, environmental pollution, the aging of the population, and consumers demanding to have leisure, recreation and outdoor recreation opportunities. Constructing a place for healthy outdoor recreation can address some of those needs. The primary objective of this study is to test this concept by identifying and prioritizing the potential health recreational sites using Geographic Information System (GIS) and Analytical Hierarchy Process (AHP) in Isfahan City, Iran. This study identifies the following factors as indicators of suitability within a health recreational city: land prices, road system, capitation, distance from industrial areas, the Air Quality Index, distance from a river, recreational sites, access to public transport stations, and distance to medical care. These factors were selected based on the professional expert’s opinions developed through the Delphi method. AHP was effectively used in this study to calculate the details of the factors and class weights. GIS (v10.2), which plays a crucial role in urban planning, was employed. The methodology proposed was useful in identifying health recreational sites by linking the criteria deemed important with the actual resources of the province.

  • Customer Perceptions of Workplace Incivility in Singapore

    • Authors: Ho; Maye S.M. et al.
Abstract: Workplace incivility is found to be on the rise and exists widely in Asian workplaces. The combination of stress, less formal organisational structures and technological advancements has been found to contribute to a surge in workplace incivility. The negative effects of workplace incivility lead to problems in productivity, employee retention and service delivery. This exploratory study aims to examine whether workplace incivility is prevalent in 5-star hotels and premier restaurants in Singapore, from the perception of customers. Results of the conducted study show that customers see that workplace incivility is prevalent. Findings showed that co-workers did not greet or acknowledge each other during work and the critical service values of courtesy and friendliness were also not consistently demonstrated towards their internal or external guests. We suspect that key stakeholders within the hospitality and tourism industry in Singapore are unaware that workplace incivility can critically paralyse the ability of their staff to deliver excellent service and can hinder Singapore from achieving high ratings in the Customer Service Index.
