  • UPAYA PENINGKATAN PRODUKSI DAN PERBAIKAN MANAJEMEN KELOMPOK USAHA KECIL
           JAMUR TIRAM

      Abstract: Jamur tiram merupakan salah satu bahan makanan yang mempunyai kandungan gizi yang baik sehingga banyak masyarakat yang senang mengkonsumsinya. Hal ini menyebabkan usaha budidaya jamur tiram menjadi usaha menarik untuk dikembangkan. Jamur tiram akan tumbuh dengan baik pada suhu 22 - 28°C dan kelembaban 80 – 90% RH. Daerah Indonesia umumnya memiliki dua musim, yaitu musim hujan dan musim kemarau. Musim hujan berlangsung sekitar bulan November sampai April, curah hujan sangat tinggi, suhu udara relatif dingin, sekitar 24°-28°C pada siang hari dan 23°-26°C pada malam hari. Sedangkan musim kemarau umumnya berlangsung sekitar bulan Mei sampai Oktober, pada musim ini suhu udara cenderung cukup panas, yaitu sekitar 28°-34°C pada siang hari dan sekitar 21°-25°C pada malam hari. Temperatur udara pada siang hari saat musim kemarau inilah yang jadi masalah bagi pembudidaya jamur tiram. Program IbM (Iptek bagi Masyarakat) ini bertujuan untuk dapat mengkondisikan udara pada saat puncak musim kemarau agar dapat tetap terjaga pada kelembaban 80-90% dan temperatur 22-280 C. Metode yang dipakai adalah dengan memasang sistem pengkondisi udara yang terdiri dari nozle pengkabutan dan exhaust fan. Nozzle kabut berfungsi menyemburkan kabut untuk menaikkan kelembaban dan menurunkan temperatur, sementara exhaust fan berfungsi untuk membuang udara panas keluar kumbung. Kabut dihasilkan oleh 8 nozzles yang mendapatkan suplai air dari pompa air 300 watt dengan tekanan minimal 3 bar. Operasi pompa diatur oleh sebuah mikrokontroller yang mendapatkan input dari sensor kelembaban dan suhu yang dipasang di dalam kumbung jamur. Oyster mushroom is one of the food ingredients that have good nutritional content so that many people are happy to consume it. This makes the cultivation of oyster mushrooms becomes an interesting business to be developed. Oyster mushrooms will grow well at 22 - 28 ° C and 80 - 90% RH. Indonesia generally has two seasons, the rainy season and the dry season. The rainy season lasts between November to April, it has very high rainfall and relatively cool air temperature, around 24 ° -28 ° C during the day and 23 ° -26 ° C at night. Meanwhile, the dry season generally takes from May to October. In this season, the air temperature tends to be quite hot, which is about 28 ° -34 ° C during the day and around 21° -25 ° C at night. Air temperature during the dry season is a problem for oyster mushroom cultivators. This IbM program aims to be able to condition the air during the peak of the dry season in order to stay awake at 80-90% humidity and temperature 22-280 C. The applied method is to install an air conditioning system which consists of a mist nozzle and an exhaust fan. The mist nozzle serves to spray mist to increase the humidity and decrease the temperature, while the exhaust fan has a function to remove the hot air out of the mushroom room. The mist is produced by 8 nozzles which get water supply from 300 watt water pump with minimum pressure 3 bar. Pump operation is controlled by a microcontroller that get input from humidity and temperature sensor that mounted inside the growing mushroom room.

  • PENINGKATAN KUALITAS PRODUK DAN MANAJEMEN KELOMPOK TANI JAMUR TIRAM DESA
           LUWUS TABANAN

      Abstract: Budidaya jamur tiram menjadi salah satu bisnis yang menjanjikan. Bisnis ini merupakan salah satu usaha yang menyediakan bahan pangan sehat tanpa tercemar zat kimia. Dengan semakin sadarnya masyarakat akan kesehatan, permintaan jamur khususnya jamur tiram meningkat di pasaran. Di Desa Luwus, Kecamatan Buriti, Kabupaten Tabanan, Bali terdapat beberapa usaha budidaya jamur diantaranya usaha budidaya jamur tiram I Ketut Padma dan I Nyoman Sudarta. Dalam perkembangannya, kelompok pembudidaya tersebut memiliki kendala dalam usaha pengolahan jamur mentah, pemasaran, manajemen keuangan, dan pengelolaan limbah baglog. Program ini memberikan solusi untuk mengatasi permasalahan tersebut dengan tujuan dicapainya empat luaran yaitu: 1) peningkatan keterampilan pengolahan jamur mentah menjadi jamur olahan siap dikonsumsi, 2) peningkatan kemampuan memasarkan produk olahan jamur secara online dengan memanfaatkan e-commerse, 3) peningkatan manajemen keuangan dengan pembukuan sederhana, 4) Peningkatan keterampilan dalam pengolahan limbah baglog yang bernilai guna dan bernilai jual. Melalui pendampingan yang dilakukan, anggota tani telah mampu membuat beberapa macam olahan jamur tiram seperti bakso jamur, sate jamur, cah, plecing, rendang serta berbagai varian rasa kripik jamur krispi dengan kemasan yang lebih baik. Sebelum diberikan pendampingan penjualan produk khusunya kripik dan jamur segar hanya dilakukan secara offline, sekarang telah mampu memasarkan secara online dengan program e-commerce dan membuat pembukuan sederhana dengan aplikasi pengolah angka. Limbah baglog yang sebelumnya dibiarkan menumpuk sekarang telah mampu diolah dan dimanfaatkan sebagai pupuk organik dan media tanam berbagai bibit tanaman holtikultura. Oyster mushroom cultivation is a promising business. This business aims to provide healthy food ingredients without being contaminated with chemicals. With more public awareness of health, demand for mushrooms, especially oyster mushrooms, is increasing in the market. In Luwus Village, Baturiti Sub-district, Tabanan Regency, Bali, there are several mushroom cultivation efforts including the cultivation of oyster mushrooms owned by I Ketut Padma and I Nyoman Sudarta. In their development, the group of farmers have constraints in the business of processing raw mushrooms, marketing, financial management and baglog waste management. This program provides a solution to overcome the aforementioned problems with four expected outcomes: 1) improved processing skills of raw mushrooms into processed mushrooms that are ready to be consumed, 2) increased ability to market processed mushroom products by utilizing social media and e-commerce 3), improved financial management with simple bookkeeping, and 4) increased skills in baglog waste processing which are valuable and worth selling. After mentoring, farmer members have been able to make several kinds of processed oyster mushrooms such as mushroom meatballs, mushroom satay, cah, plecing, rendang and various flavors of crispy mushroom chips with better packaging. Before being given assistance in product sales, especially fresh chips and mushrooms, it was only done offline, now it has been able to use online e-commerce programs and make simple bookkeeping with spreadheet processing applications. Baglog waste which was previously left to accumulate now has been able to be processed and utilized as organic fertilizer and planting media of various horticultural plant.

      Abstract: Gula merah kelapa merupakan hasil dari proses pengolahan nira kelapa yang di Bali disebut tuak dengan cara pemanasan untuk menguapkan kandungan air sehingga berbentuk padatan atau kristal. Nira kelapa diperoleh dari penyadapan mayang kelapa (bunga kelapa) dengan cara memotong bunga kelapa lalu tetesan nira yang keluar ditampung dalam suatu wadah yang biasanya berbentuk tabung dari bambu atau wadah lainnya. Tujuan penelitian ini adalah untuk mengetahui kapasitas produksi pengerajin pembuat gula merah dikaitkan dengan luas lahan dan jumlah pohon yang disadap, serta perhitungan rendamen gula merah yang dihasilkan. Subjek atau responden dalam penelitian ini adalah pengerajin pembuat gula  merah di desa Dawan Kaler, Kecamatan Dawan, Kabupaten Klungkung, dengan jumlah responden sebanyak 18 orang. Penelitian ini dilaksanakan menggunakan metode survey dan wawancara. Data yang dikumpulkan terdiri dari data primer dan data sekunder. Data primer yang berkaitan dengan keadaan sosial ekonomi dan keadaan usahanya sampai saat ini. Data primer ini dikumpulkan melalui wawancara dan pengisian kuesioner secara langsung. Sementara itu, data sekunder didapat dari kantor Kepala Desa, Kecamatan Dawan, Kabupaten Klungkung, serta referensi lainnya yang terkait dengan penelitian. Hasil penelitian ini diharapkan dapat dijadikan acuan bagi masyarakat dalam melakukan usaha kerajinan pembuat gula merah. Brown coconut sugar is a product of coconut sap processing which is in Bali called Tuak. It is attained by a heating process to let the water content evaporate so that it will form a solid or crystal. Coconut sap itself is obtained from coconut flower by incising the flower of coconut, then the dripping sap is accommodated in a tube-shaped container that is usually from bamboo or other containers. The purpose of this research is to find out the production capacity of brown sugar maker craftsman in compliance with the land width, numbers of trees incised, and calculation of produced brown sugar sucrose. Subjects or respondents of this research are the brown sugar maker craftsman in Dawan Kaler Village, Dawan Sub-District, Klungkung Regency, with respondents number are 18 people. This research was carried out by survey and interview methods.  The collected data consists of primary and secondary data. The primary data is related to social economy and business condition until today, and it was collected through interview and direct questionnaire fill in. Meanwhile, the secondary data was obtained from the office of the Head of Village, Dawan Sub-district of Klungkung Regency, and also other references related to the research. It is expected that the result of this research will be able to be used as a reference for people in performing the brown sugar making business.

  • PENYAJIAN GREEN FOOD BAGI KELOMPOK SADAR WISATA DALAM MENUNJANG GREEN
           EVENT DI DESA PINGE

      Abstract: Konsep green tourism menjadi perdebatan yang hangat saat ini, seiring dengan perkembangan pariwisata di dunia. Konsep ini mengedepankan keberlanjutan untuk kepentingan ekonomi, sosial budaya, dan lingkungan. Salah satu kegiatan pariwisata yang memakai landasan green adalah green event “CULTIC”. Ini merupakan sebuah paket tour yang mengajarkan budaya green berdasarkan budaya local baik bagi mahasiswa internasional maupun nasional. Desa Pinge salah satu desa wisata yang terletak di Kecamatan Marga Kabupaten Tabanan yang telah berkali-kali dijadikan tempat pelaksanaan CULTIC. Selama pelaksanaan, terdapat permasalahan dalam penyajian makanan yang berkonsep green untuk keperluan makan dan minum bagi peserta event. Makanan disajikan secara sederhana dan akibatnya makanan kurang menarik untuk menambah selera. Masalah lain adalah belum munculnya keunikan green food berdasarkan budaya Desa Pinge. Permasalahan ini dapat diatasi melalui pelatihan memasak dan menyajikan berdasarkan konsep green sesuai dengan budaya Desa Pinge. Kegiatan pelatihan melalui beberapa tahapan pertama melakukan identifikasi makanan tradisional dan bahan-bahan makanan dan minuman yang ada di Desa Pinge, kedua membuat menu, ketiga melakukan pelatihan memasak dan membuat minuman pembuka, keempat melakukan penataan penyajian makanan dan minuman, dan kelima melakukan testimoni kepada peserta event. Hasilnya makanan dan minuman tersaji dengan konsep green yang menggunakan bahan dari desa. Dua model sajian makanan dihasilkan yaitu Metegak dan Ketegak Agung. Para peserta event merasa senang dan puas terhadap makanan dan minuman yang disajikan. Dampak dari hasil ini bahwa pengelola pariwisata harus mempertahankan konsep penyajian makanan yang unik dan memiliki daya saing. Hasil ini juga memberikan kontribusi terhadap sustainable tourism melalui green food berbasis budaya di desa wisata. Kata kunci: green tourism, green event, green food, desa wisata pinge The concept of green tourism is becoming a hot debate nowadays along with the development of tourism in the world. This concept promotes sustainability for economic, social, cultural and environmental interests. One of the tourism activities that uses green concept is "CULTIC". This is a tour package that teaches green culture based on local culture for international and national students. Pinge Village is one of the tourist villages located in Marga sub-district which has been the place of CULTIC implementation for many times. There is a problem in the presentation of green concept foods for the purpose of eating and drinking for the participants of the event. The food is presented very simple, and consequently the food is less appealing to taste. Another problem is the uniqueness of green food based on Pinge Village culture has not emerged yet. This problem can be solved through cooking and presenting training based on green concept of Pinge Village culture. Training activities conducted through five stages: firstly is identifying traditional food and ingredients in Pinge Village, secondly is making menu, thirdly is doing cooking training and making drink opening, fourthly is doing the presentation of food and beverage, and fifthly is doing testimony to the participants of the event. The result is food and drink which were presented with the concept of green using materials from the village. Two food serving medallions are Metegak and Ketegak Agung. The event participants were happy and satisfied with the food and drinks served. The impact of these results is that tourism managers must maintain the concept of serving a unique and competitive food.   • PENGEMBANGAN HILIRISASI PRODUK KOPI ARABIKA KINTAMANI

      Abstract: Kecamatan Kintamani merupakan sentra pengembangan Kopi Arabika yang ditunjukkan oleh adanya beberapa usaha mikro yang memproduksi kopi bubuk. Di antara pengusaha kopi yang sekaligus merupakan petani tersebut adalah I Ketut Jati dan I Dewa Ayu Putri Asih Banjar. Saat ini, kedua mitra tersebut menghadapi kendala dari sisi produksi, pemasaran, dan juga manajemen seperti kurangnya peralatan kemasan, sedikitnya pelanggan, serta tidak adanya manajemen keuangan yang baik. Usaha mereka memiliki kelemahan dalam menjaga mutu produksi sehingga kualitas kopi yang dihasilkan pun rendah. Dalam pemilihan biji kopi yang akan diolah, tidak ada standar kematangan yang diterapkan. Dalam hal ini, biji yang masih hijau sampai dengan biji yang mau jatuh pun juga dipakai. Selain itu, pemasaran yang dilakukan kedua mitra ini tidak efektif dan belum meluas. Teknik pemasaran dilakukan masih secara konvensional yaitu hanya dengan menjajakan produk di beberapa warung, dititipkan ke kolega yang kebetulan pameran, serta menunggu konsumen ataupun reseller yang datang. Hal ini tentunya menyebabkan penjualan produk yang tidak maksimal dan mengakibatkan keuntungan yang diperoleh kurang memuaskan. Berdasarkan analisis permasalahan di atas, maka dilakukan kegiatan sosialisasi, pemberian bantuan alat produksi, pelatihan manajemen keuangan, pembuatan website, pelatihan pengoperasian website, brosur serta pengajuan pembuatan surat Sertifikat Produksi Pangan Industri Rumah Tangga (SPP-IRT). Indikator capaian menunjukkan bahwa ada peningkatan produksi sebesar 100%, peningkatan jumlah pelanggan sebesar 50%, peningkatan penghasilan sebesar 100%, dan tercapainya manajemen keuangan mitra yang semakin baik. Kata kunci: kopi arabika kintamani, pemasaran online, manajemen keuangan Kintamani sub-district is a center for developing the Arabica Coffee indicated by the existence of several micro coffee industry entrepreneurs. Among those entrepreneurs who are basically farmers are I Ketut Jati and I Dewa Ayu Putri Asih Banjar. At present, these two partners face production, sales, and management obstacles such as lack of packaging equipment, lack of customers, and lack of good financial management. Their businesses have a weakness in maintaining their product quality so that the coffee quality is low. In selecting beans ripe which will be processed, they did not use a standard. In this case, the green coffee beans, as well as those that will be fallen, are also used. Furthermore, the marketing of the two partners is not effective and has not been widespread yet. Their marketing techniques are still carried out conventionally which are by peddling products in several stalls, entrusting sales to colleagues who went for an exhibition, and waiting for consumers or resellers to visit. This certainly leads to not optimal product sales and result in less satisfactory profits. Based on the aforementioned problem analysis, the socialization activities, provision of production tools, financial management training, website creation, website operation training, banners, stamps and brochures and the submission of a letter on the Household Food Production Certificate (SPP-IRT) were made. The indicators of achievement show that there is increased production by 100%, increased number of customers by 50%, increased income by 100%, and a better financial management that meets the standards can also be achieved. Keywords: kintamani arabica coffee, online marketing, financial management

  • SISTEM PLTS UNTUK PETERNAK AYAM BROILER DI DESA SELANBAWAK, KECAMATAN

      Abstract: Usaha ternak ayam broiler I Wayan Antara, sebagai mitra 1, merupakan salah satu pengusaha ternak ayam broiler yang memelihara ayam sebanyak 5.000 ekor dengan kandang ayam berjarak 300 meter dari pemukiman. Usaha ternak ini menggunakan listrik penerangan 200 watt yang disalurkan melalui instalasi kabel dimana sering terjadi gangguan pada sistem penyaluran daya listrik (berkisar 4-5 kali/bulan). Gangguan listrik yang tidak kontinyu dapat meningkatkan prosentase kematian anak ayam, sehingga pada akhirnya hasil panen ayam menurun. Solusi terhadap permasalahan mitra 1 ini adalah dengan memberikan dan memasang instalasi sistem PLTS (Pembangkit Listrik Tenaga Surya) sebagai sumber energi listrik alternatif yang mampu memberikan suplai daya untuk penerangan kandang. Di lain pihak, mitra 2 yaitu I Nyoman Wakil memiliki kandang ayam yang lebih besar dengan kapasitas ayam broiler 12.000 ekor yang terletak berkisar 200 meter dari pemukiman penduduk. Keperluan daya listrik untuk kandang ayamnya bersumber dari listrik PLN yang disalurkan dengan menggunakan kabel melalui area persawahan milik orang lain. Hal ini juga menimbulkan permasalahan terjadinya gangguan suplai daya listrik sehingga sangat mempengaruhi pertumbuhan ayam, bahkan tingkat kematian ayam dapat meningkat. Suplai daya listrik sangat berpengaruh terhadap keberhasilan panen ayam broiler. Baik dari segi biaya operasional maupun tingkat perkembangan pertumbuhan ayam itu sendiri. Dengan pemberian sistem PLTS pada mitra 2 yang diinstalasi langsung di kandang ayam mampu mengatasi permasalahan mitra yang pada akhirnya dapat meningkatkan produksi ayam broiler tersebut. Dari sisi manajamen bisnis usaha ternak, kedua mitra mengelolanya secara sederhana tanpa dilengkapi dengan pencatatan serta dokumentasi yang memadai. Permasalahan ini diatasi dengan memberikan pelatihan tentang manajemen usaha melalui pelatihan intensif langsung kepada mitra. Dengan pelatihan ini, kedua mitra mampu mencatat dan mendokumentasikan semua transaksi dan aktifitas yang terjadi pada usaha ternak ayam mereka. Kata kunci: energi listrik, PLTS, ayam broiler The broiler chicken business of I Wayan Antara, as the first Partner, is one of the broiler chicken businessmen who keep 5,000 chickens with a chicken coop distance of 300 meters from the residential area. This broiler chicken business used 200 watts of electricity transmitted through cable installation where disruptions to the electrical power distribution system frequently occur (4 to 5 times per month). Non-continuous electrical disturbances can increase the percentage of deaths of chicks so that in the end the chicken yield decreases. The solution to partner 1 problem is by providing and installing PVP (Photovoltaic Panel) system installations as an alternative electrical energy source in a chicken coop which capable of providing power supply for cage lighting. On the other hand, the second partner which is I Nyoman Wakil has a larger chicken coop with a capacity of 12,000 broiler chickens which are located around 200 meters from residential areas. The need for electrical power for chicken coops sourced from PLN electricity is channeled using cable through other people's rice fields. This also raises the problem of the occurrence of disturbances in the supply of electrical power which greatly affects the growth of chickens even the death rate of chickens can rise. An electric power supply is very influential on the success of harvesting broiler chickens. Both in terms of operational costs and the level of development of chicken growth itself. By giving the PLTS system to the second partner which was installed directly in the chicken coop, it was able to overcome the partner's problems and ultimately could increase the production of broiler chickens. In terms of livestock business management, both partners manage it simply without being equipped with adequate records and documentation. This problem is addressed by providing training on business management through intensive training directly to partners. With this training, both partners are able to record and document all transactions as well as their activities that occur in the chicken farm business. Keywords: Electric energy, PVP, broiler chicken
