      Abstract: Background: COVID-19 pandemic brings a higher risk of malnutrition because of the economic crisis that emphasizes the importance of child nutritional status monitoring during the pandemic. However, nutrition-related care in health care faces several challenges to the social limitation policy for preventing virus spreading. Challenges include delivery, coordination, and follow-up methods. In addition, the mothers' perception concerning the importance of nutritional status monitoring also becomes the determinant of their participation.Objectives: This research aimed to explore the implementation method, challenges, and mothers' perception of the children's nutritional status monitoring process during a pandemic through “posyandu” by applying health protocols.Methods: This research is a descriptive qualitative study in which the data were collected using in-depth interviews. The respondents in this study were mothers of a child aged 0-5 years who lived in Yogyakarta and participated actively in Posyandu. Data triangulation was applied by interviewing the cadres of posyandu and nutritionists in Health Care or Office in Yogyakarta. Results: The posyandu delivered the measurements by adjusting the method with an invitation divided into several measurement sessions or a door-to-door system to minimize crowd. The obstacles faced were the need to procure medical devices and ensure the validity of the data obtained. Conclusions: Child nutritional status monitoring during the COVID-19 pandemic was conducted by applying COVID-19 safety protocols according to the recommendations of the Indonesian Ministry of Health. There should be sufficient support from stakeholders to help posyandu overcome the obstacles: the procurement of medical equipment to meet the health protocol requirements. In addition, there is a need to improve parents' skills in measuring child anthropometric measurements through education and guidelines.

  • Effect of high-protein milk on lipid profiles and blood glucose in young
           adult

      Abstract: Background: High-protein milk is a complex food that contains several potentially bioactive compounds that might affect blood glucose and cholesterol. Epidemiological data indicate that high-protein milk consumption is associated with a decrease in the prevalence of metabolic disorders or maintaining metabolic health.Objective: This study aimed to analyze the effect of high-protein milk on cholesterol, low-density lipoprotein (LDL), high-density lipoprotein (HDL), triglycerides, and fasting blood glucose.Methods: This study used an experimental trial with the designed randomized controlled trial. The subjects were divided into two groups: 24 subjects in the treatment group and 23 subjects in the control group. The treatment group was given high-protein milk and nutritional education for 90 days. The control groups were given nutritional education.Results: The results showed that blood glucose did not have a significant difference between the two groups (p>0.05), but it decreased 1.75±3.6 mg/dl after high-protein milk intervention. Blood cholesterol and LDL showed significant differences between the two groups (p<0.05). HDL and triglycerides showed no significant difference between the two groups (p>0.05).Conclusion: Intervention of high-protein milk could significantly reduce cholesterol and LDL levels and reduce blood glucose after 90 days of intervention in the young adult age group. High-protein milk can be a recommendation to prevent metabolic syndrome.

  • Optimasi sifat organoleptik, indeks, dan beban glikemik formula enteral

      Abstract: Optimization of organoleptic, glycemic index, and a load of enteral formula based on tempe and jicama flourBackground: Tempeh and jicama have the potential effect as hypoglycemic agents. Hyperglycemic patients are recommended to consume formula with a low glycemic index to control blood glucose levels properly. Although balancing and roasting could improve the aromas of tempeh flour, research is lacking on tempeh powder-based enteral formula.Objective: This study aimed to analyze the organoleptic, glycemic index, and glycemic load of enteral formulas based on tempeh and jicama flour to meet the requirements of enteral formulas for hyperglycemic patients.Methods: Experimental research with 3 levels of treatment, namely variations in the ratio of tempeh flour and jicama flour with formulas 1 (1:1); 2 (3:2); and 3 (4:7) with two methods, namely steam blanching and roasting before tempeh drying. An organoleptic test using a hedonic test was carried out on 25 semi-trained panelists. One-shot case study glycemic index and glycemic load test on 30 subjects met the inclusion criteria. Data analysis used the Kruskal-Wallis test.Results: The color, aroma, and taste in formula 3 were acceptable to the panelists, but the texture was less favorable. Formula 3 has a glycemic index of 55.20 and a glycemic load of 14.90. There was no difference in an index and glycemic load in the 3 enteral formulas.Conclusion: Formula 3, with a ratio of 4:7, a moderate glycemic index, and load, could be acceptable to the panelists.

  • Persepsi ahli gizi di Indonesia terhadap penerapan nutritional care
           process (NCP) di rumah sakit

      Abstract: Dietitians’ perception of the implementation of the nutrition care process (NCP) in IndonesiaBackground: The nutrition care process (NCP) developed by The Academy of Nutrition and Dietetics was adopted and implemented in Indonesia. Some hospitals in Indonesia do not have a proper facility to support dietitians to implement NCP optimally.Objective: To evaluate dietitians’ perception of the NCP implementation in hospital settings in Indonesia.Methods: This study was a cross-sectional design with dietitians who have been working in a hospital as the study subject. Data were collected by questionnaire. Each subject answered questions on general data, nutrition screening practice, and 20 questions about the NCP implementation. The perception score is ranged from one(1) for ‘strongly disagree’ to five(5) for ‘strongly agree.’ The score was summarized and categorized into two groups ‘good’ and ‘less’ positive perception. Univariate and bivariate analysis was used to evaluate the data statistically. Results: More than half of the participants have a good/positive perception of NCP implementation (62.5%). There was a significant association between the level of education and nutrition screening training to other health workers' perceptions statistically. Conclusion: NCP has been implemented very well in a hospital setting in Indonesia. There are improvements needed in some key aspects to improve the quality of the nutrition care process in the hospital, especially for each dietitian to have a better and more standardized perception nationally on implementing NCP.

      Abstract: Effect of consuming arrowroot cookies containing glucomannan porang as a snack on total cholesterol levels of people with type 2 diabetesBackground: People with type 2 diabetes (T2D) have a risk of dyslipidemia, which is an increase in total cholesterol levels. Dietary fiber is known to have health benefits for improving lipid profiles. Arrowroot cookies containing glucomannan porang is a snack with high dietary fiber content.Objective: This study aims to determine the effect of consuming arrowroot cookies as a snack for 8 weeks on the total cholesterol levels of people with type 2 diabetes.Methods: This study is a quasi-experimental study with a pre-test post-test design with control group. Subjects are type 2 diabetes patients who are registered in four Yogyakarta City Health Centers. The intervention group was given five arrowroot cookies (65 grams) as a substitute snack for 8 weeks. Arrowroot cookies contain 0.57% soluble fiber and 15.80% insoluble fiber. Fasting total cholesterol levels, nutrient intake, anthropometry, and physical activity were measured twice, at pre- (week 0) and post-intervention (8th week).Results: The average total cholesterol levels of the control group and intervention group changed with no significant difference between the two study groups. The intervention group experienced a significant increase in total cholesterol levels (p<0.05) from 182.36 mg/dL to 202.55 mg/dL. There were no significant changes in anthropometric and physical activity. There was an increase in fiber intake in both groups but it was not significant for the intervention group (p=0.051).Conclusion: There was a significant change in the total cholesterol level of people with type 2 diabetes after consuming arrowroot cookies containing glucomannan porang as a snack for 8 weeks.
