  • Under Weightiness among Ever-married Non-pregnant Women in Bangladesh: A
           Population Based Study

Reazul Karim   and Md. Shamsher Alam   The increasing prevalence of under weightiness among young women is a growing public health concern. This paper identified the determinant factors of under weightiness among non-pregnant ever-married women in Bangladesh. Data and necessary information of 16,206 non-pregnant ever-married women were extracted from the Bangladesh Demographic and Health Survey 2011. The chi-square test and binary logistic regression analysis were used as the statistical tools to analyze the data. The results revealed that the women are found underweight around two times more (15.4% in urban, and 28% in rural) in the rural areas than that of urban areas in Bangladesh. Almost all the factors are found statistically significantly associated with underweight for both urban and rural areas. The binary logistic regression model identified the higher risk of being underweight in the younger age group (15-24 years), illiteracy, husband's illiteracy, having more children, poor economic condition, not having exposure to mass media, household food unsecured, and genital discharged women for both urban and rural areas. The under weightiness among non-pregnant ever-married women for both urban and rural areas are prevalent. Therefore, there is a need for public health programs related to nutrition that are able to address both the areas simultaneously.

  • Effect of Pre-treatments and Drying Methods on Dehydration and Rehydration
           Characteristics of Carrot

Sajjad Hossain   and Abdullah Iqbal   The study was conducted to evaluate the effect of pre-treatments (0.1%KMS, 0.2%KMS, 0.3%KMS and blanching) and drying methods (mechanical drying and solar drying) on the dehydration and rehydration characteristics of carrot. The two drying methods yielded dehydrated products with different dehydration ratio, rehydration ratio, co-efficient of reconstitution and moisture content in both the dehydrated and rehydrated materials. It was seen that the drying time has been influenced by pre-treatments and drying methods. Pre-treatments increased drying time (for 0.3%KMS) and higher drying time (for 0.3%KMS) was required in solar drying. Pre-treatment, drying methods and boiling time affected the various rehydration properties. Highest rehydration ratio (3.70) and co-efficient of reconstitution (0.48) values were found for 0.1% KMS pre-treated mechanically dried and 0.2% KMS pre-treated solar dried carrots, respectively. Mechanical drying method was found better both for dehydration and rehydration properties for all the pre-treatments for example, 0.1%KMS pre-treated carrot gave co-efficient of reconstitution 0.48, while this value was 0.45 for same pre-treatment in solar drying.

  • Comparative Analysis of the Physico-chemical and Antioxidant Properties of
           Honey Available in Tangail, Bangladesh

Abdul Alim   The aim of the current study was the comparative analysis of the physical, biochemical and antioxidant properties of Mustard, Litchi, and Nigella honey. The physical parameters include the mean moisture content of Mustard, Litchi and Nigella honey were found 14.32%, 15.27%, and 14.12% respectively; PH content were 6.97, 5.8, 4.78; the TSS content were71%, 70%, and 73% respectively. The biochemical parameters including protein content were 1.103%, 0.57% and 0.985%; mean ash content were 0.2%, 0.19%, and0.188%, total carbohydrate content were 84.377%, 83.97% and 84.496% and the minerals contents Na were 539.238 ppm, 424.3565 ppm and 588 ppm; K were 239.216 ppm, 219.017 ppm and1063.774 ppm; Ca were 1710.499 ppm, 611.4852 ppm and 75.4 ppm for the Mustard, Litchi and Nigella honey respectively. The Antioxidant properties such as polyphenol content were found 42.572 ± 0.00529 mg gallic acid/50 ml, 30.625 ± 0.00529 mg gallic acid/50 ml and 95.5 ± 0.00529 mg gallic acid/50 ml; flavonoid content were found 1.052 ± 0.000577 mg catechin/50 ml, 0.6 ± 0.000577 mg catechin/50 ml and 2.66 ± 0.000577 mg catechin/50 ml and vitamin C content were 0.41 mg/100ml, 0.63 mg/100ml and 0.7 mg/100ml for Mustard, Litchi and Nigella honey respectively.

The purpose of this study was to evaluate the addition of six types of different commercial vegetable oils (avocado, canola, high oleic safflower, soybean, grape seed and partially hydrogenated vegetable oil) to the diet of Wistar rats at two different concentrations (14.4% and 25.6% of energy intake from each added oil) and check rats’ tolerance and lipid profile effect following consumption for 5 weeks. However, the pandemic HIV/AIDS and the recognition that HIV positive mothers can transmit the virus to their babies through breast milk precipitated a terrible public health dilemma in countries like Ethiopia where incidences of HIV is high. This paper aimed to assess the EBF knowledge of HIV positive mothers and associated factors in a selected health institution of West Oromia (Ethiopia). Results showed that the knowledge of EBF among HIV positive mothers. Significantly high proportion, 86.4% and 65.3% of the study participants had the knowledge on the benefits of exclusively breastfeeding and its protective role against disease in infant respectively. Similarly, the majority (80.5%) of the study participants had knowledge that breast milk alone is enough for six months. Energy crisis resulted in high price index of chemical fertilizers. Coupled with limited production of fertilizer along with escalating fertilizer cost, reduced soil health and the problem of pollution gave rise to interest in precision nutrient management tools. Field experiment was conducted to study the effect of variety and nutrient management on the growth and productivity of maize under lateritic belt of West Bengal during kharif season of 2013 at the farmers’ field located in Birbhum district of West Bengal, on sandy loam lateritic soil having low fertility status and acidic reaction (pH5.6). The experiment consisted of the five levels of fertilizer i.e, F1 = control, F2 = state recommendation (150:75:75 kg N:P2O5:K2O ha-1), F3= Nutrient Expert® (120:34:51 kg N:P2O5:K2O ha-1), F4=farmers practices (80:40:40 kg N:P2O5:K2O ha-1), and F5= Basal application of 50:75:75 kg N:P2O5:K2O ha-1 with split N application on basis of LCC, and two level of varieties viz.,V1= Rajkumar,V2= Sona, thus making ten treatment combinations, which were replicated thrice and was laid out in randomized block design(RBD). The values for growth parameter like plant height, dry matter, cob characters like length of cob, girth of cob, weight of cob, number of cobs per plant, number of grains per cob, grain yield, stover yield, harvest index were observed. It was found that the growth parameter as well as yield component and yield were significantly affected by different varieties and different levels of fertilizer. Among the two hybrid varieties, Rajkumar proved significantly superior over hybrid variety Sona with regard to growth attributes like plant height, dry matter accumulation. The result indicated that different schedules of fertilizer expressed significant effect on plant height, cob girth and length, grain per cob, grain weight per cob, test weight, Maize grain yield and stover yield at harvest. It was found that where fertilizer was applied on the basis of “Nutrient expert” recommendation gave highest yield and yield parameter values. The highest values for agronomic efficiency, physiological efficiency and recovery efficiency were also found where fertilizer was applied on the basis of “Nutrient expert®” recommendation. Thus, it was observed that the application of nutrient on the basis of recommendation obtained from the decision support system like “Nutrient expert®” and LCC based application proved superior over farmer’s practice as well as State recommendation where much higher dose of nutrients were applied. So, it may be concluded that the “Nutrient expert” based recommendation and cultivation of Rajkumar hybrid may be helpful in improving productivity and profitability of Maize cultivation in the Laterite soils of West Bengal, India .

These oxides are formed by auto-oxidative enzymatic processes promoted by the heat treatment of food and/or to exposition of them to the presence of oxygen and sunlight during storage. Their importance is that they are associated with pathological processes like apoptosis, dyslipidemia and pro-oxidative states, among others. The objective was to evaluate the cytotoxicity, by means MTT assay, of 7-keto cholesterol (7KC), cholestane-triol (Triol), α-epoxy cholesterol (α-epoxy C), β-epoxy cholesterol (β-epoxy C) in differentiated Caco-2 cells at 120μM for 24, 48 and 72h.Triol was the most cytotoxic COP, with a percentage of cell viability among 3.2 to 3.4 at all times studied. The β-epoxy C and 7KC showed similar percentages from 65.4 to 6.9 and 67.4 to 6.5, respectively. The α-epoxy C was the least cytotoxic (83.3 to 48.7% of cell viability).COPs in the study conditions, showed a cytotoxic effect on Caco-2 cells due to disruption of the integrity of mitochondrial function, being the most toxic compound the triol.

  • Biogenic Amines and Microbiological Profile of Egyptian Cheeses

Most of the methods for amine determination in these products involve acid extraction followed by a liquid-liquid purification step to selectively separate amines and amino acids. This study aimed to describe the development of biogenic amines in Egyptian cheeses during ripening and storage regimes. Biogenic Amines content in Mish, Ras and Blue cheeses were 270-1300, 340-980 and 210-700 mg/kg, respectively. The dominant Biogenic Amines were different. This work confirms that the main biological feature influencing amines formation is the extent of growth of microorganisms, like enterococci, characterized by decarboxylase activity. It is important to report that the presence of biogenic amines due to the activities of these microorganisms is maintained within safe levels. In Egypt, reports deals with the Egyptian cheeses (Mish, Ras and Blue) are scanty. So, the present work was carried out to fill the gap in our knowledge on its microbiological and biochemical features, focusing on hygiene and consumer health aspects.

  • Macromolecular and Viscoelastic Properties of Low Methoxy Pectin from
           Cashew Apple Pomace

AOP was mainly composed of galacturonic acid (84.5%) with some neutral sugars of which rhamnose (1.9%), arabinose (3.8%), and galactose (5.5%) were the main constituents. The degree of methylation (DM) of AOP was 41%, indicating extraction of low methoxy pectin (LMP). The intrinsic viscosity and average-molecular weight of AOP were 398 mL/g and 142 kDa, respectively. AOP exhibited a calcium-mediated gelling strength of 128 which appeared to be higher than that (104) of commercial citrus pectin with similar DM. AOP yielded firmer Ca2+-mediated LMP gels, thereby showing a high power of gelation. Viscoelastic analyses also substantiated good gelling behaviour of the produced AOP. Therefore, cashew apple pomace, which is an industrial cell wall residue from the production of cashew nut, appears to be a potentially viable source of production of marketable LMP without the need for enzymatic and/or chemical demethylation.

  • Food Security in a Regional Area of Australia: A Socio-economic

The aim of this study was to highlight food security issues in the two local government areas of Dorset and Clarence in Tasmania, Australia. This paper reports on the key quantitative findings of the project with a focus on food access and food utilisation, and their association with socio-economic factors. Quantitative data were collected from a total of 835 survey participants using a questionnaire developed in close consultation with service provider organizations as well as public health and nutrition experts. The study revealed 53 (6.6%) residents were at the low food security and 18 (2.1%) who literally went without food. The significant correlations between low food security and socio-economic factors evidenced in the study further suggested that the low-food security residents were more likely to come from the more vulnerable groups of low income families (χ2= 42.528, df = 6, p < 0.05), the younger and older population groups (χ2= 12.361, df = 5, p < 0.05) or those living in socio-economically disadvantaged rural areas (χ2= 165.9, df =7, p < 0.05). A link between physical and financial access was clearly indicated due to high fuel cost (44.4%) which was the most common barrier reported among those who used personal vehicles for travelling to and from food shops. The study findings help to direct strategic policies to food security for the future of Tasmanians such as the Food for all Tasmanians strategy by the Tasmanian Food Security Council which focuses on ensuring social food equity for all Tasmanians. These strategies include promoting publicly funded community cars, promoting local produce and food access initiatives such as increased farm gate sales, farmer markets, food cooperatives, community gardens and growing and swapping produce within communities.

           Breastfeeding among Lactating Mother in Siaya County of Nyanza Province in

Odindo   John Alwar   Rose Olayo   Aaron Mwayi   and Henry Oyugi   Introduction: This was a nested study in which 2011 data from a baseline study conducted by Great Lakes University of Kisumu, supported with funds from UNICEF Kenya, findings was analyzed and used to assess the role of demographic and personal characteristic associated with exclusive breast feeding as a way of checking the high mortality of under-5 children in Nyanza province. Methods: A multi-stage cluster sampling technique was used to select 3,200 households. Descriptive statistics were used to determine the coverage of exclusive breastfeeding practice. Frequencies were run using SPSS and Chi –square test was used to determine the association. Findings: The practice of exclusive breastfeeding in Siaya County is found at 29.9%; with unemployed mothers presenting at 36.1%, while working class mothers performed poorly at 21.4%. On demographic factors, marital status reported that polygamous had 33.0%. Single mothers reported 36.0%.On personal characteristics, the time taken to initiate breast milk to a baby had an association with exclusive breast feeding. Conclusion: Marital status, putting the child on breast milk has an association with exclusive breastfeeding.

The study was carried out at Floriculture Research Area, University of Agriculture, Faisalabad, during the year 2011-2012. The experiment was laid out in randomized complete block design (RCBD) with three replications. There were twelve treatment combinations comprising four levels of NPK (0, 0.5%, 1% and 1.5%) and three level of Zn (0%,0.5% and 1%,) which were applied on Stock (Matthiola incana.L). The results regarding growth of stock were found significant. The treatments comprising both zinc and NPK as T11 (1% Zn + 1.5% NPK) was ranked first in plant height (91.66 cm), number of leaves per plant (65.33 leaves/plant) and leaf chlorophyll contents (85.53 spade). T7 (0.5% Zn + 1% NPK) was ranked first in leaf area (36.10 cm2) and minimum days to flowering were recorded in T11 (1% Zn + 1.5% NPK), 42.60 days. T11 (1% Zn + 1.5% NPK) got the first position in stalk length (87.63 cm) and floret diameter (4.93 mm). Foliar application of zinc and NPK increased nutrient accumulation in leaves of stock. The nitrogen contents (6.0 %) phosphorus contents (0.46 ppm) and potassium contents (38.10 ppm) increased in response to treatment comprising both zinc and NPK.

      Source:Universal Journal of Food and Nutrition Science  Volume  1  Number  1  Ekta Prakash and Dwijendra. K.Gupta The objective of the present study was to evaluate the in-vitro anti-cancer effects of ethanolic extract of seed of Myristica fragrans (Houtt) against seven human cancer cell lines ascribed to central nervous system, Colon cell (Colon502713,Colo205), Liver(Hep-2), Lung (A-549), Ovary OVCAR-5 and Prostrate (PC-5). The SRB assay was used to test cytotoxic activity for all the cell lines. The activity was evaluated at 100µg/ml concentration of test material. OVCAR-5 (Ovary) cell line showed highest cytotoxic activity (97%) Growth inhibition of colon 502713 and PC-5 (Prostrate) cell lines was 86%. SF-295(CNS) and Colo205 showed 73% growth inhibition, while Hep-2 (Liver) showed 72%. A-549 (Lung) showed no significant activity (50%). Our results indicate that the plant has a promising anti-cancer activity. The ethanolic extract of plant showed highest anti-cancer activity against OVCAR-5. Further investigation for active compound present in Myristica fragrans is required for cancer management and for the development of new anti- cancer drugs.

  • Antibacterial Efficacy of Selected Enterococcus Strains Isolated from
           Traditional Rice Beverage “Handia”

The strains were tested against three Gram-positive bacteria viz. Bacillus subtilis, Staphylococcus aureus, S. epidermidis and five Gram-negative bacteria viz. Escherichia coli, Pseudomonas aeruginosa, Salmonella typhimurium, Vibrio cholerae by agar cup method. Surprisingly, it was noticed that most of the Gram-positive bacteria were inhibited by cell free supernatant of isolated strains. The results indicated that the tested Gram-positive bacteria found more sensitive than Gram-negative, and were inhibited. Upon verification, all the isolated strains are found Gram-positive coccus, have the ability to resist the physiological concentration of bile salt, grow at temperature 10 to 42℃ with pH range ≥9.6 and tolerate 6.5% NaCl. Further studies necessary to characterize and purify the bacteriocin produced from the strains.

  • Anthropometric and Biochemical Parameters of Rats Treated with a
           Low-carbohydrate Diet

Forty-eight weanling male Wistar rats were divided into three groups: Control (n = 18); Experimental 1 (n = 15) and Experimental 2 (n = 15). The experiment was divided into two phases of 60 days each. For the first 60 days, the Control Group received a control diet and Experimental Groups 1 and 2 received an obesity-inducing diet containing 17% lipid, 0.5% cholic acid and 1% cholesterol. Diet and water were offered ad libitum and the animals were weighed three times a week. Over the final 60 days, Experimental Group 1 started to receive the control diet and Experimental Group 2 started to receive a carbohydrate-restricted diet containing 40% protein and 50% lipid. During phase I, the animals of the Experimental Groups showed greater weight gain, hepatic steatosis, increased retroperitoneal and perigonadal tissue and increased total cholesterol and LDL. During phase II, Experimental Group 2 showed a higher weight gain, hepatic steatosis, and higher total and LDL cholesterol values compared to Control and to Experimental Group 1. We conclude that the goal of first phase, which was to induce the rats to obesity through fat diet containing cholesterol and cholic acid was hit because was a increasing body weight, retroperitoneal and perigonadal fat and hepatic steatosis. The carbohydrate-restricted diet was not effective in terms of weight loss, with the presence of hepatic steatosis and increased retroperitoneal and perigonadal tissue

  • A Note on Multiple Comparison Procedures for Analysis of Ranked Data

Koziol   Ranked samples typically arise in sensory evaluation studies, in which a group of paneliests independently rank the same set of samples. In this setting, Christensen and colleagues (Journal of Food Science 71:S132-S143, 2006) have proposed a nonparametric procedure for multiple comparisons of the samples, based on the sums of the ranks of the samples, summed across the panelists’ rankings. Christensen and colleagues utilized a simulation procedure in order to estimate critical differences between rank sums, at various alpha levels and combinations of numbers of panelists and samples. In this note, exact distribution theory relating to the rank sums is derived, using probability generating functions; and, critical values can be determined through computer algebra.
