      Teknologi Industri Pertanian Volume 31 Nomor 3
      Edisi Desember, Tahun 2021. Semua artikel yang dimuat pada Jurnal Teknologi
      Industri Pertanian ini telah diseleksi dan ditelaah oleh
      Dewan Editor dan Mitra Bebestari yang kompeten.
      Hanya artikel-artikel berkualitas baik dan sangat baik
      yang dapat dimuat pada Jurnal Teknologi Industri
      Pertanian.
      Topik-topik yang disajikan pada edisi ini meliputi:

      asam, kajian dampak lingkungan produk tepung agar,
      pemodelan rantai pasok fleksibel pada pemurnian
      minyak sawit, formulasi pembuatan biogrease dengan
      base oil epoksi RBDPO. Sebagai penutup disajikan
      artikel yang berjudul rancangan pembelajaran
      transformatif pada mata kuliah wajib kurikulum. Kepada penulis dan mitra bebestari yang telah
      berkontribusi pada penerbitan jurnal edisi ini, kami
      menyampaikan terima kasih yang mendalam. Kami
      mengundang rekan sejawat peneliti dan praktisi

  • KAJIAN SINERGITAS AGROINDUSTRI KELAPA SAWIT DAN USAHA MIKRO KECIL UNTUK

      Abstract: Through Making Indonesia 4.0, The Ministry of Industry responds to the demands of energy needs by
      innovative renewable energy development to reduce the consumption of fossil fuels such as petroleum, natural
      gas and coal with agricultural biomass waste sources. The aim of this research was to synergize waste from the
      biodiesel industry in the form of sterol glycosides with purun waste from creative small-scale enterprises (SMEs)
      to produce renewable energy as a circular economy. The method applied was in the form of descriptive analysis, followed by identifying and characterizing waste found in the biodiesel industry, as well as various purun
      wastes, which were collectively sampled every day for 3 months, becoming the basis for developing innovative
      products. Interviews were conducted on 60 purun craftsmen to confirm the circular economy program being
      studied. Observations were also made in the biodiesel industry and purun craftsmen. Data processing was
      obtained from the results of experiments by making briquette products referring to several parameters which
      were the basis for standardizing renewable energy products. The synergy between the two actors, namely the
      Biodiesel Industry and SMEs in micro-scale circular economy activities, produced environmentally friendly- renewable energy which was very helpful for purun micro and small businesses in Purun Village, Banjarbaru,
      South Kalimantan. Renewable energy results were from various formulas developed with the main ingredients
      derived from purun biomass charcoal and biodiesel industrial waste. The advantage of the product when several
      other variables met the SNI standard 01-6235-2000 had a calorific value of 5.809 cal g-1 - 6.598 cal g-1
      , where
      5.000 cal g-1 which was the SNI for briquette heat could be exceeded. The calorific value produced is equivalent
      to bituminous grade coal having a carbon content of above 85%.

  • CONSUMER PREFERENCE ANALYSIS OF NEW COMPLEMENTARY ORGANIC FOOD PRODUCTS

      Abstract: XYZ Fruit Puree is one of complementary food products developed by Company X. A marketing plan to
      expand the market of the product is considered by developing new product variants, namely XYZ Organic Fruit
      Puree. The plan is done by providing new price offers and changing the target market from upper Social Economic
      Status (SES) into middle to upper. This study aimed to evaluate consumer’s acceptance, purchase intention, and
      preference toward XYZ Fruit Puree and XYZ Organic Fruit Puree product concepts. Non-parametric tests of
      Wilcoxon signed-rank test and Mann-Whitney test were used for data analysis in this study to compare the
      preference of total samples and each sample groups differentiated by its social economic status and usership. The
      result showed that XYZ Organic Fruit Puree concept was more preferred by all types of consumers in aspects of
      overall liking, uniqueness, intention to buy, and preferential intention. However, if price was taken into
      consideration, intention to buy for XYZ Fruit Puree concept was significantly greater than the XYZ Organic Fruit
      Puree concept. The recommendations given were the price of XYZ Organic Fruit Puree can be adjusted to be more
      acceptable to consumers as well as increasing consumer trust in product safety.

      Abstract: The development of the fishery industry not only provides advantages, but has a significant impact on the
      environment. Life Cycle Assessment (LCA) can be used to identify positive and negative environmental impacts of
      a process or product, find opportunities for processing and product development, comparing and analyzing the
      impact of the environment caused and calculat the environmental impacts resulting from a quantitative product.
      Life Cycle Assessment (LCA) according to the ISO 14040 consists of four stages, namely the determination of the
      goals and scope, inventory analysis, impact analysis, and interpretation. The purpose of this literature study was
      to identify and quantify the potential pollution and environmental impact caused by the production process in the
      fishery industry. Fishery products studied were fish fillets and canned fish products. The potential environmental
      impacts of processing of fishery industry cover greenhouse gas (GHG), acidification, and eutrophication. The
      description of the environmental impact analysis in the fishery processing industry was explained in this work. The
      literature data indicates that the impact of GHG is caused by CO2, the impact of acidification is generated by SO2, and the effects of eutrophication are generated by PO4
      3-. Recommendations for improvements are replacing energy
      sources and fuels.

  • PENGARUH VARIASI WAKTU HOMOGENISASI DENGAN ULTRA TURAX DAN KONSENTRASI
           SUSU KEDELAI TERHADAP MUTU SUSU SAGA

      Abstract: Saga seeds (Adenanthera pavonina, L) contain protein and lignoseric acid and may serve as potential
      functional food and beverages This study aims to utilize saga seed in producing saga milk with its physical property
      such as stability and fat globule as well as chemical properties. Soy milk was added to reduce strong beany flavour
      in saga milk. The saga milk fat globules were reduced by ultraturax or mini homogenizer at 8,000 rpm at different
      homogenization time. A two factorial completely randomized design was carried out with two replications. Saga
      milk and soy milk ratio (A): a1 (100 % saga milk); a2 (80 : 20), a3 (75 : 25), and a4 (70 : 30), respectively; and
      homogenization time (B) : 0, 10, 20, and 30 minutes (b1, b2, b3, and b4, respectively). Fat globule, protein, and
      fat contents, fatty acids profile, soluble solids, and pH values were analyzed. Milk flavour compounds were
      analyzed using GCMS. Sensory evaluation was carried out by preference test. The more soymilk added resulted in
      significant increase of protein, total soluble solid (p=0.05), significantly reduce size of fat globules and pH value
      (p=0.05) and also reduced unpleasant flavour. The saga milk was accepted based on sensory evaluation; saga
      milk stability was good. Saga milk has dominant content of essential fatty acid including oleic acid, linoleic acid
      and lignoseric acids. The unpleasant flavor was dominated by hexanal compounds but the typical compounds in
      saga milk are Dihydroedulan II; Pyrazine, 2-Methoxy-3-Isobutyl, and Benzaldehide-4-Methyl. Formula saga milk:
      soy milk = 70: 30 is saga milk that is worth producing.

      Abstract: Grapes are a commodity that has high added value. The wide variety of products shows that wine has a high
      demand. This study aimed to provide recommendations for alternative priority products for processed Balinese
      grapes and optimization strategies in the development of processed grape products in Buleleng Regency. The
      research method was a survey, observation, focus group discussion, mapping of industrial trees, and Analytic
      Hierarchy Process (AHP). The results showed that there were 10 existing processed products, and there were 19
      processed products as alternatives. The priority processed products were wine, jam, and syrup. Matrix internal
      external showed a hold and maintains strategy with an alternative strategy of diversifying wine products by looking
      at consumer preferences, producing fine quality and high yield wine, entering the international market, installing
      pipes to drain water throughout the vineyards, making grape derivative products as unique as possible, training the
      labour about wine good production methods, reducing the number of sales of fresh grapes, increasing the
      production of processed grapes for sale, maximizing the promotion of processed wine, forming a market for

      Abstract: Cattle/buffalo business insurance (AUTS/K) is a government program to mitigate livestock businesses'
      risks, especially cattle and buffalo. For the participation and involvement of farmers in this program, it is necessary
      to have a good dissemination process to be widely known, understood, and followed by the livestock business
      community throughout Indonesia. This study aimed to design a dissemination strategy for the AUTS/K using the
      Soft Systems Methodology (SSM) approach. This research was expected to produce a conceptual model of the
      AUTS/K dissemination so that the dissemination of information is comprehensive and evenly distributed to each
      area so that it can be accepted and applied by farmers. The AUTS/K dissemination strategy is a strategic plan to
      generate innovation and creativity in disseminating information to farmers by utilizing various media. The results
      of the study will provide recommendations for AUTS/K dissemination strategies to improve and develop livestock
      insurance by involving the government, religious and community leaders, insurance companies, extension agents
      and field officers, universities and research institutions, as well as the use of advertising agencies and technology
      media in disseminating information to farmers in Aceh Province. In addition, the SSM approach can describe
      problems well and form a conceptual for the dissemination model of AUTS/K in Aceh Province.

      Abstract: In the last 10 years, the research about the technology of bionanocomposite synthesis has increased rapidly,
      starting from the simple technology to advanced technology of synthesis. From the several technologies of
      synthesis of bionanocomposite that have been developed, each has its own advantages and disadvantages.
      Therefore, the selection of the right technology of synthesis of bionanocomposite is one of the indicators of success
      in its synthesis. This review identified the latest developments in technology of synthesis of bionanocomposite and
      focuses on methods of synthesis of bionanocomposite was most widely used and a technology that has advantages
      over other technologies. It is hoped that this review can provide information about methods of synthesis of
      bionanocomposite in general and specifically can provide information about methods of synthesis of
      bionanocomposite reinforced with mono-diacylglycerol (M-DAG) and cellulose nanocrystal (CNC). Based on the
      identification from several result of research, potential method to synthesis of bionanocomposite are combination
      of two methods, namely twin-screw extrusion method and injection molding method. Those technologies can be an
      alternative potential methods of synthesis of antistatic bionanocomposite reinforced with M-DAG and CNC.

  • POTENSI MINYAK MIKROALGA DAN KHAMIR SEBAGAI SUMBER ASAM LEMAK ESENSIAL

      Abstract: Edible oils as essential fatty acids sources, such as linolenic acid, eicosapentaenoic acid, and
      docosahexaenoic acid, are commonly extracted from plants and seafoods, particularly fish. The productionof fish
      oil has several drawbacks, including overfishing issues, mercury contamination, and unpleasant smell of fish. Oil
      production from plants requires extensive land used, long harvest time, and high operational costs. Single-cell oils
      from microorganisms are the solution to overcome these problems. Therefore, this study aimed to explore the
      potential of microorganisms, i.e. microalga and yeast, which had previously been isolated from mangrove forests
      in Aceh Province, Indonesia, as sources of essential fatty acids. Two types of microorganisms used were
      Thraustochytrium multirudimentale and Rhodotorula mucilaginosa. The results showed that the highest amount
      of oil was extracted from yeast (17.04 ± 0.78 mg/g), while microoalga produced 4.50 ± 0.49 mg/g only. Based on
      correlation analysis, the optical density (OD) and biomass, had good correlation with r = 0.990. The spectra of
      FT-IR analysis from microalga and yeast oils proved that both contained C=O groups which identified as esters
      of fatty acids and C=C groups identified as unsaturated fatty acids. Thraustochytrium multirudimentale and
      Rhodotorula mucilaginosa are potential as single-cell oil sources containing essential fatty acids.

      Abstract: Gracilaria sp is one type of red algae seaweed that has been developed in Indonesia. Gracilaria sp is
      used as raw material for agar flour. Currently, agar flour is widely used to meet the needs of both food and nonfood industries. Therefore, agar flour must be developed to obtain the best quality, adequate quantity, and ecofriendly. This study aimed to identify the inputs, outputs, and environmental impacts of the agar flour product's
      life cycle, determine the source of the impact (hotspot), and recommend improvement scenarios. The method used
      to analyze the environmental impact caused by a product was life cycle assessment (LCA). The scope of the LCA
      study was cradle to gate, namely cultivation of Gracilaria sp, transportation of raw material to industry, and
      production process in the industry. The environmental impact study was global warming with CO2eq unit,
      acidification with SO2eq unit, and eutrophication with PO4eq unit. Based on the research, the impacts of global
      warming, acidification, and eutrophication on the life cycle of agar flour were 26.28 kg-CO2eq/kg agar flour, 0.18
      kg-SO2eq/kg agar flour, and 0.03 kg-PO4eq/kg, respectively. The production process unit was hotspot for the
      impact of global warming, acidification, and eutrophication on the life cycle of agar flour. The improvement
      scenarios to reduce the environmental impacts included replacing urea with NPK fertilizer, finding suppliers of

      Abstract: The development of the CPO-producing industry provides great benefits for the CPO refining industry.
      CPO is used as the main raw material for refined derivative products such as oleopangan products (cooking oil,
      margarine, shortening) and oleochemicals (fatty acids, fatty alcohol, glycerine). A related problem is the
      inefficiency in the distribution network caused by the complexity of the existing system and related to the many
      types or product variants that must be integrated in shipping. The aim of this research was to design a flexible
      supply chain network for domestic palm oil refined products using a soft computing approach with a genetic
      algorithm. The simulation results using GA showed that the optimal solution completion time of the
      mathematical model only takes 57 seconds. The optimization of the model that has been formulated was tested in
      cases where the results were measured by the variables of the number of products distributed, distribution flow
      in the supply chain network, minimum cost (Z), and network facilities. The design was also tested by verification
      of the optimization model by correcting errors in the model until the model produces a feasible solution and
      validating the optimization model to experts through the Association of Indonesian Palm Oil Entrepreneurs
      (GAPKI) North Sumatra, the Medan Palm Oil Research Center (PPKS) and Public Appraisal Service
      Consultants that often handles problems in the oil palm sector. According to experts, the designed model
      represented the real situation so that it can be said that the model has been validated. The design is flexible
      because it is able to meet the existing demand with utilities above 100% for 9 periods at a cost of Rp
      630,892,386.

  • FORMULASI PEMBUATAN BIOGREASE DENGAN BASE OIL EPOKSI RBDPO

      Abstract: Biogrease is a semi-solid lubricant produced using vegetable oil. The biogrease consists of base oil and
      thickening agent. Base oil modification is done to change properties such as viscosity, adhesive properties to iron,
      etc. which have an impact on tribological properties. One of the modifications made is the epoxidation of the base
      oil to increase the viscosity value. Epoxidation of the olein fraction /RBDPO (Refined Bleached Deodorized Palm
      Olein) was carried out by reacting olein with acetic acid and peroxide acid. This study aimed to find the best time
      in the synthesis of RBDPO epoxy base oil, to study the effect of variations in % thickener on the characteristics of
      biogrease, and the best characteristics of biogrease produced from RBDPO epoxy base oil. The epoxidation was
      carried out with a ratio of RBDPO : acetic acid : peroxide acid of 1: 5: 2 at a temperature of 50°C, with various
      experimental times of 3 hours, 4 hours, and 5 hours. The epoxidation results calculated the oxirane number and
      iodine number with two replications, then analyzed ANOVA statistics and LSD test. Furthermore, the best
      epoxidation results were formulated with a thickening agent with a ratio of 80:20 and 85:15 to produce biogrease.
      The statistical analysis showed that the best epoxidation time is 3 hours. Thickening agent affects the texture of
      biogrease. Biogrease with a ratio of base oil with a thickener of 80: 20 has a short fibrous texture (short fibril)
      with an NLGI value of 3, while biogrease with a ratio of 85: 15 has a brittle texture with an NLGI value of 00. The
      best biogrease produced in this study is biogrease with a ratio of 80:20 with an NLGI value of 3.

      Abstract: Transformative education is not negotiable. Along with the changing era, where generation Y and Z have
      the character of their generations; they are very different from the previous generation. The various effects of
      digital disruption make it important in presenting transformative education. Transformative means that new ways
      are needed to ensure that a series of education can provide good outcomes for learning. The current challenges,
      embedding the character and attitude of statesmanship, critical thinking, and being able to provide creative
      solutions to those around them are fundamental to producing superior learners. There are five compulsory
      subjects, namely Indonesian, English, Religion, Pancasila, and Citizenship which are often still delivered in
      conventional ways. In this era, learning is required to produce noble values that are internalized as learners.
      Besides this, there are contextual things that need to be embedded in these Y and Z generation learners, especially
      in the context of changing times whose challenges are different and lead to sustainable actions that are grown to
      generate benefits for their surroundings. This research was conducted with a transformative research approach,
      developed directly for three years at Padjadjaran University and then titrated three times so that it could produce
      compulsory course formulations and university characteristics that resulted in learning outcomes in the form of
      mastery of values, attitudes, and basic skills needed as fundamental learners in the industrial era 4.0. This research
      produced an elaborative model of compulsory subjects and university characteristics by elaborating on
      compulsory substances, skills, and attitudes with learning models designed as a unit to provide a greater
      probability of achieving outcomes.
